So I came across this pin the other day (of course) and literally made it right away. It is sooooo good, I’ve since, made it 3 times! I found the recipe here, but made it vegan. I made it for my husband (and put some ice cream on it) he LOVED it. I made it for my sister, she LOVED it. And the greatest thing is, it is SO fast. I’m talkin…5 minutes from start to finish! If you were making a bunch of them (or don’t like using the microwave), you could put them in the oven at 350F until cooked through, but I’ve made them in the microwave, because the most I’ve made is 2 at a time.
Vegan Deep Dish Chocolate Chip Cookie:
1 tablespoon melted Earth Balance
1 tablespoon white sugar
1 tablespoon brown sugar
3 drops of vanilla
pinch of salt
1/2 tablespoon ground flax mixed (preferably with a milk frother, or in a processor) 1 1/2 tablespoons water
1/4 c. flour
2 tablespoons chocolate chips (I use semi-sweet)
Mix your Earth Balance with your sugars, salt, and vanilla extract. Have your flax egg ready, and measure out your flour.
Mix your Earth Balance and flax egg until incorporated, and then add in your dry. Don’t mix completely though!
Mix your chocolate chips in and then mix until just combined, and becomes a soft dough.
Spread in a ramekin (the one I used is approx 11/4in tall and 5in round). Sophie at My Happy Place
suggests microwaving it from 40-60 seconds, but my microwave stinks, so it comes out perfect at 1.5 minutes. Let it cool off a bit, and dig in!
